Ingredients for two sandwiches

  • 6 slices of Spelt Cob Loaf 450 g
  • 400 g large prawns
  • 1 ripe avocado
  • 1 lettuce heart
  • 2 spring onions
  • 2 celery sticks
  • ½ red onion
  • 1 lime
  • A few sprigs of chives
  • Butter
  • Salt, pepper
  • Cocktail sauce
  • Coriander

Method

  • Brown the slices of bread in a frying pan with butter for a few minutes.
  • Cut the prawns in half lengthwise.
  • Dice the avocado.
  • Finely chop the spring onions, celery and onion.
  • Mix together the avocado, spring onions, celery, coriander, red onion, lemon zest and juice, then adjust the seasoning.

Making the sandwich 

  • Generously spread the cocktail sauce inside the first slice.
  • Add the prawns, then top with the avocado and lettuce tartare.
  • Add a second slice and repeat.
  • Close the sandwich with a third slice.
  • Sprinkle chopped spring onions and fresh herbs to finish.
